Last night I made what I deem a delicious dinner for my family. I’ve been trying to cook with whole foods and stick more to the Paleo way of eating this year which means lots of meat and veggies and steering clear of grains, legumes and any processed foods.
I found a recipe on Pinterest but tweaked it to fit our tastes.
Slow Roasted Ranch Chicken Thighs
2lb bone-in skin on chicken thighs
12 oz beer, any kind
1/4 cup home made ranch mix (recipe below)
1/2 cup chicken broth
6 whole cloves of garlic
Place all ingredients in a slow cooker and cook on low for 6-8 hours until chicken falls off the bone. At that point you can take the skin off but I prefer to leave it on, just because I like the flavor.
Oven Roasted Smokey Sweet Potatoes with Avocado Dipping Sauce
Smokey Spice Rub to taste (recipe below)
olive oil, 1-2 TB
5-6 small sweet potatoes, or however many you want
salt to taste
Cut sweet potatoes however you like them, disks, match sticks, wedges, etc. Roast until tender in 400* oven. Enjoy!
Avocado Yogurt Dipping Sauce
1-2 TB Plain Greek Yogurt
1 whole mashed avocado
Juice of half a lime
Smokey Spice Rub to taste
Mix all ingredients.
Now for the spice mixes.
Home Made Ranch Mix (Recipe from http://selfreliancebyjamie.blogspot.de/2011/08/tis-seasonings.html)
5 tablespoons dried minced onions
7 teaspoons parsley flakes
4 teaspoons salt
1 teaspoon garlic powder
Mix together and store in an air tight container.
For dressing: Mix 2 tablespoons dry mix with 1 cup mayonnaise and 1 cup buttermilk or sour cream.
For dip: Mix 2 tablespoons dry mix with 2 cups sour cream.
For this recipe I took a 1/4 cup and sprinkled it over the chicken.
Mix up a few hours before serving, so the flavors all blend.
Smokey Spice Rub (recipe from Practical Paleo by Diane Sanfilippo)
1TB Chipotle Powder
1TB Smoked Paprika
1TB Onion Powder
1/2 TB Cinnamon
1 TB sea salt
1/2 TB black pepper (freshly ground)
Mix all ingredients in a small container.
And that is that.
