Chicken, Avocado and Herb Dip

We are going to a happy hour at a friend’s house and were asked to bring an appetizer or dessert. I can’t go to any party without bringing something to share, so it was nice to have some idea of what to bring.

I knew I wanted to bring something involving crescent rolls and cream cheese, because that is what I had in my fridge. As I was looking on Pinterest, I found a recipe for chicken and avocado salad, so I pinned it thinking we would have it for dinner.

Then I said to myself…why make it dinner when I could make it a dip a la buffalo chicken dip?

Ingredients:
1/4 C Mayo
1 Can of chicken or cooked shredded chicken
1 Lime, juiced
1 Large avocado, mashed
Cilantro, fresh handful, chopped
Chives, fresh, about 2TB, chopped
Parsley, fresh, about 2TB, chopped
3 Cloves of garlic, minced
1 Large dollop of Greek yogurt
Salt and pepper to taste

Combine all ingredients, let sit overnight. Use tortilla chips our veggies to eat.
