Artichoke, sunchoke
The harvest is plenty
The mud made it easy to dig
Stir fried or roasted
Baked, mashed or toasted
Deliciously healthy and big
With friends I will share
This healthy new veggie
That is, it’s at least new to me
Like taters they’ll grow
Not fast but real slow
Roots not quite as deep as a tree
a pinch of homestead
